Slice onion into rings. Clean and slice mushrooms. Heat 1 TBS olive oil in medium cast iron or other non-stick skillet. Heat 1 TBS olive oil in skillet and cook mushrooms, tamari, vinegar, garlic & black pepper until mushrooms are very soft and fully cooked, about 4 minutes. Remove and set aside mushrooms. Heat remaining TBS olive oil and place chops into hot skillet. Cook until browned on both sides, about 3 min. Turn heat off or very low and thoroughly baste chops with sauce packet. Careful not to overheat & dry out chops once basted. Serve: On two plates arrange a bed of mushrooms on each plate and place a chop on top. Spoon caramelized onions over chops. Garnish with a sprig of parsley. Serve with potatoes, rice or polenta and a vegetable. Serves 2
